Ingredients
- 1 1/2 c. white cornmeal
- 1 to 2 Tbsp. sugar
- 1 c. buttermilk
- 1/2 tsp. baking soda
- 1/2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1 egg, beaten
- about 1 Tbsp. oil (for skillet)
Method
- Combine all ingredients; stir until all dry ingredients are moistened.
- Place cast-iron skillet in a 475° oven until skillet is hot.
- When skillet is heated, spoon in mixture and bake for 20 minutes.
- Serve hot, buttered.
