Ingredients
- 3 large sweet potatoes
- 3/4 c. crushed juice pack pineapple, drained
- 1/4 c. reserved pineapple juice
- 1/4 c. chopped dates
- 1/4 tsp. cinnamon
- 1/8 tsp. salt
Method
- Scrub potatoes and prick with fork.
- Bake in 400° oven 1 hour or microwave 8 minutes until tender.
- Halve potatoes lengthwise and scoop out pulp.
- Mash and combine with a mixture of the remaining ingredients.
- Pile into shells.
- Bake in 350° oven 15 minutes until potatoes are heated through.
