Ingredients
- 50 to 70 lb. tomatoes
- 15 large onions, cut in rings
- 45 cloves garlic, minced (the stuff in jars works really well)
- 3/4 to 1 c. olive oil (the good stuff)
- 15 Tbsp. Italian seasoning
- 4 Tbsp. salt
- 5 Tbsp. sugar
- 30 oz. tomato paste (to cut down on the cooking time, never claimed to be THAT domestic!)
Method
- Saut onion rings and minced garlic in olive oil. Add spices. Cook down while preparing tomatoes.
