Ingredients

  • 5 green peppers
  • 2 C cooked rice
  • 3 med tomatoes, peeled and chopped
  • 1 1/2 c diced cheddar cheese
  • 10 slices of bacon
  • 1/4 t salt, pepper to taste

Method

  • 1. Cut tops off peppers, seed, and parboil 5 minutes. Drain and place in shallow baking dish.
  • 2. Mince bacon and brown in skillet. Remove from heat,
  • 3. Add cooked rice, tomatoes, cheese, and salt. Stir gently until ingredients are blended, but not pasty.
  • 4. Fill peppers and top with cube of cheese and sprinkle of paprika.
  • 5. Bake 350 degrees about 15-20 minutes.
