Ingredients
- 5 green peppers
- 2 C cooked rice
- 3 med tomatoes, peeled and chopped
- 1 1/2 c diced cheddar cheese
- 10 slices of bacon
- 1/4 t salt, pepper to taste
Method
- 1. Cut tops off peppers, seed, and parboil 5 minutes. Drain and place in shallow baking dish.
- 2. Mince bacon and brown in skillet. Remove from heat,
- 3. Add cooked rice, tomatoes, cheese, and salt. Stir gently until ingredients are blended, but not pasty.
- 4. Fill peppers and top with cube of cheese and sprinkle of paprika.
- 5. Bake 350 degrees about 15-20 minutes.
