Ingredients

  • 1 lb box Farfalle Pasta
  • 1 bag fresh spinach
  • 2 beefsteak tomatoes, diced
  • 1 yellow bell pepper, diced
  • Crumbled Feta Cheese to taste
  • 1/2 cup olive oil
  • 1/3 cup fresh lemon juice
  • 2 tsp dried oregano
  • 1 tsp fresh thyme leaves
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1 clove garlic, minced

Method

  • 1) Cook pasta according to box directions, in a large pot. When almost finished, add spinach to water with pasta. Drain completely and rinse both with cold water. Return to the large pot.
  • 2) Add all the vegetables and mix.
  • 3) In a separate bowl mix all remaining ingredients for dressing - except for the cheese.
  • 4) Pour over pasta and vegetable mixture. Stir thoroughly. Add cheese and stir again.
  • 5) Serve cold.
