- 1 lb box Farfalle Pasta
- 1 bag fresh spinach
- 2 beefsteak tomatoes, diced
- 1 yellow bell pepper, diced
- Crumbled Feta Cheese to taste
- 1/2 cup olive oil
- 1/3 cup fresh lemon juice
- 2 tsp dried oregano
- 1 tsp fresh thyme leaves
- 1 tsp salt
- 1/8 tsp pepper
- 1 clove garlic, minced
Method
- 1) Cook pasta according to box directions, in a large pot. When almost finished, add spinach to water with pasta. Drain completely and rinse both with cold water. Return to the large pot.
- 2) Add all the vegetables and mix.
- 3) In a separate bowl mix all remaining ingredients for dressing - except for the cheese.
- 4) Pour over pasta and vegetable mixture. Stir thoroughly. Add cheese and stir again.
- 5) Serve cold.
