Ingredients

  • 4 tablespoons butter
  • 1 cup chunky peanut butter
  • 12 cup honey
  • 12 cup packed brown sugar
  • 1 teaspoon vanilla
  • 12 teaspoon salt
  • 3 12 cups rolled oats (do not use quick-cooking)

Method

  • Preheat oven to 375 degrees.
  • Have an ungreased rimmed baking sheet at hand.
  • Combine butter, peanut butter and honey in a microwave-safe bowl.
  • Microwave on HIGH for 1 minute, then stir.
  • Mixture should be smooth and thick; if needed, microwave on HIGH for another minute.
  • Add brown sugar, vanilla and salt, stirring until smooth, then add oats and mix until evenly coated.
  • Spread mixture evenly on baking sheet and bake for 10-15 minutes, or just until browned and crisp.
  • Let cool on baking sheet, then break it up into bite-sized pieces.
  • Store in an airtight container.
  • Granola may be stored at room temperature for up to 2 weeks or it can be refrigerated for up to 1 month BUT it won't last that long!
