Method

Place grated palm sugar (or brown sugar),  lemon grass (bruised) and water in a saucepan over medium heat. Stir until sugar is dissolved. Bring to the boil and simmer for 5 minutes. Cool syrup to room temperature, then strain. Add 2 tsp lime juice and mix well. Combine strawberries (hulled and halved), kiwifruit (peeled and cut into chunks) and 1/2 rockmelon (peeled and cut into chunks) in a large bowl.

Add lemon-grass syrup and toss gently.

Serve fruit salad drizzled with coconut cream.
