Ingredients

  • 1 cup fruity white wine
  • 1 cup water
  • 1 1/2 cups caster sugar
  • 1 tbsp thyme leaves
  • the rind (thinly peeled) of 1/2 orange
  • 2 navel oranges
  • 2 blood or ruby oranges
  • 4 figs (cut into wedges)

Method

Combine white wine, water, caster sugar, thyme leaves and the rind (thinly peeled) of 1/2 orange in a saucepan over low heat. Stir until sugar is dissolved. Simmer for 10-15 minutes or until syrupy. Use a small, sharp knife to cut rind and pith from 2 navel oranges and 2 blood or ruby oranges and discard, then cut fruit into wedges and place in a large bowl. Add 4 figs (cut into wedges) and pour strained wine syrup over. Toss gently to combine.

Serve with vanilla yoghurt.
