Ingredients

  • 1/2 honeydew melon (peeled and seeded)
  • 2 mangoes (peeled and seeded)
  • 16 cooked king prawns (shelled and de-veined)
  • 100g snow peas (trimmed)
  • 2 tsp fish sauce,
  • 2 tsp lime juice
  • 1 tsp caster sugar
  • 1 tbsp crisp fried shallots*
  • * available from Asian food stores.

Method

Cut honeydew melon (peeled and seeded) and mangoes (peeled and seeded) into 2cm pieces. Place in a large bowl with cooked king prawns (shelled and de-veined).

Blanch snow peas (trimmed) in boiling water for 10 seconds, then refresh in cold water. Add snow peas to mango mixture.

Whisk 2 tsp fish sauce, 2 tsp lime juice and 1 tsp caster sugar in a small bowl and drizzle over salad.

Toss gently to combine and serve sprinkled with crisp fried shallots.
