  • 10 crepes, dessert pre-made
  • 2 cups fresh strawberries rinsed, hulled, and sliced
  • 1/4 cup granulated sugar
  • 8 ounces cream cheese, softened
  • 1/4 cup confectioners' sugar
  • 1 tsp vanilla

Method

  • Reserve 1 cup of the strawberries. In a small bowl, combine remaining strawberries and 1/4 cup granulated sugar; refrigerate to chill thoroughly. In a medium bowl, beat cream cheese and powdered sugar until smooth and well blended. Stir in reserved strawberries.
  • Warm crepes-1 min. in a toaster oven.
  • Spread about 1 tablespoon strawberry and cream cheese mixture over each crepe. Roll up. Serve topped with the chilled sweetened strawberries.
  • Serve strawberry crepes with whipped cream or creme fraiche. Garnish with mint leaves.
