Ingredients

  • 1 lb. lean boneless round steak, cut in cubes
  • 2 c. cubed carrots
  • 1 medium onion, cut in eighths
  • 2 1/4 c. cubed red potatoes
  • 1 (14 1/2 oz.) no-salt tomatoes
  • 1 c. water
  • 1 c. brewed coffee
  • 2 Tbsp. molasses
  • 1 Tbsp. Worcestershire sauce
  • 1 beef bouillon cube
  • 1/2 tsp. thyme
  • 1/2 tsp. marjoram
  • 1/4 tsp. hot sauce (optional)
  • 1 bay leaf
  • 1 (15 oz.) can pinto beans

Method

  • Trim fat from steak.
  • Spray Dutch oven with cooking spray. Brown on all sides.
  • Remove and place on paper towel to drain. Wipe grease from oven.
  • Re-coat with spray.
  • Add carrots and onion. Saute until slightly brown.
  • Return steak to pan.
  • Add all other ingredients.
  • Stir and simmer on low for 1 1/2 hours.
  • Add beans and simmer 30 minutes.
  • Yield:
  • 2 1/2 quarts.

  • 1 cup.
