Ingredients

  • 1/2 c. butter
  • 1 c. sugar
  • 1/2 tsp. almond extract
  • 2 eggs, separated
  • 2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 c. crushed strawberries (no juice)

Method

  • Cream together butter, sugar and extract.
  • Add 2 egg yolks. Sift together dry ingredients.
  • Alternate by adding flour and strawberries to creamed mixture, starting and ending with flour. Beat 2 egg whites until stiff and fold into mixture.
  • Pour into greased and waxed paper loaf pan.
  • Bake for 50 to 60 minutes or until toothpick inserted comes out clean in a 350° oven.
