Ingredients

  • 6 medium yellow squash, cut into 1/2-inch circles
  • 1 1/2 c. bread crumbs, divided
  • 1 c. grated Cheddar cheese, divided
  • 1 tsp. salt and pepper to taste
  • 1 c. milk
  • 3 eggs

Method

  • Heat squash in heavy skillet, adding water only if absolutely necessary.
  • Boil 5 minutes or until squash is tender.
  • Drain and mash squash thoroughly.
  • Add 1 cup bread crumbs, 1/2 cup cheese, salt, pepper, milk and eggs.
  • Pour into a buttered casserole dish. Bake at 350° for 30 minutes.
  • Combine remaining bread crumbs and cheese and sprinkle on top.
  • Bake additional 10 minutes.
