Ingredients
- 6 medium yellow squash, cut into 1/2-inch circles
- 1 1/2 c. bread crumbs, divided
- 1 c. grated Cheddar cheese, divided
- 1 tsp. salt and pepper to taste
- 1 c. milk
- 3 eggs
Method
- Heat squash in heavy skillet, adding water only if absolutely necessary.
- Boil 5 minutes or until squash is tender.
- Drain and mash squash thoroughly.
- Add 1 cup bread crumbs, 1/2 cup cheese, salt, pepper, milk and eggs.
- Pour into a buttered casserole dish. Bake at 350° for 30 minutes.
- Combine remaining bread crumbs and cheese and sprinkle on top.
- Bake additional 10 minutes.
