Ingredients
- 1 bag Success rice
- 3/4 lb. extra lean ground beef
- 1/2 c. chopped onion
- 1/2 c. water
- 1 1/2 c. thin sliced zucchini
- 1 (1 1/2 oz.) taco seasoning mix
- 1/2 c. frozen whole kernel corn
- 1 (14 oz.) can stewed tomatoes
- 1 c. (4 oz.) shredded low-fat Cheddar cheese
Method
- Prepare rice to package directions.
- In large skillet brown meat and onion; drain.
- Stir in other ingredients except rice and cheese; heat through.
- Remove from heat.
- Add rice.
- Sprinkle with cheese.
