Ingredients

  • 3 eggs
  • 1/2 c. granulated sugar
  • 1 1/2 c. dark corn syrup
  • 1/4 c. butter, melted
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla
  • 1 1/2 c. chopped roasted peanuts
  • 9-inch unbaked deep pastry shell

Method

  • Beat eggs until foamy.
  • Add sugar, syrup, butter, salt and vanilla.
  • Continue to beat until thoroughly blended.
  • Stir in peanuts.
  • Pour into unbaked pastry shell.
  • Bake in a 375° oven for 50 to 55 minutes.
  • Serve warm or cold.
  • May be garnished with whipped cream or ice cream.
  • Makes 6 servings.
