Ingredients
- 3 eggs
- 1/2 c. granulated sugar
- 1 1/2 c. dark corn syrup
- 1/4 c. butter, melted
- 1/4 tsp. salt
- 1/2 tsp. vanilla
- 1 1/2 c. chopped roasted peanuts
- 9-inch unbaked deep pastry shell
Method
- Beat eggs until foamy.
- Add sugar, syrup, butter, salt and vanilla.
- Continue to beat until thoroughly blended.
- Stir in peanuts.
- Pour into unbaked pastry shell.
- Bake in a 375° oven for 50 to 55 minutes.
- Serve warm or cold.
- May be garnished with whipped cream or ice cream.
- Makes 6 servings.
