Ingredients

  • 12 or more Hot Italian Sausages
  • 1 large Onion, finely chopped
  • 3 qt. or more Water, personal choice of consistency
  • 6 large or 8 medium Potatoes
  • 1 - 2 lbs. Baby Carrots, cut in third
  • 1 pkg. Celery Hearts, sliced into 1/4 inch pieces

Method

  • Place Sausages in Water bringing to a boil and simmer until the sausages are firm. Remove the sausage,
  • being careful not to pierce them when taking them out (this could add unwanted fat to the soup). Cut the sausage into bite-size pieces and return to the water.
