Ingredients

  • 6 Tbsp. cornstarch
  • 1/4 c. sugar
  • 1/2 tsp. salt
  • 2 c. hot milk
  • 1 Tbsp. butter
  • 1 tsp. vanilla
  • 2 egg whites
  • 1/4 c. sugar
  • shredded coconut
  • baked pie shell (9-inch)

Method

  • Blend the cornstarch with the first 1/4 cup sugar and salt. Pour the hot milk over this, stirring constantly, until thick. Add 1 tablespoon butter and the vanilla.
  • Beat egg whites until they are stiff.
  • Add the last 1/4 cup of sugar and beat until points form.
  • Fold into cream mixture while it is hot.
  • Cool slightly, then heap into a 9-inch baked pie shell.
  • Cover with a layer of shredded coconut.
  • Top with whipped cream or meringue. Cool thoroughly before cutting.
