Ingredients
- 6 Tbsp. cornstarch
- 1/4 c. sugar
- 1/2 tsp. salt
- 2 c. hot milk
- 1 Tbsp. butter
- 1 tsp. vanilla
- 2 egg whites
- 1/4 c. sugar
- shredded coconut
- baked pie shell (9-inch)
Method
- Blend the cornstarch with the first 1/4 cup sugar and salt. Pour the hot milk over this, stirring constantly, until thick. Add 1 tablespoon butter and the vanilla.
- Beat egg whites until they are stiff.
- Add the last 1/4 cup of sugar and beat until points form.
- Fold into cream mixture while it is hot.
- Cool slightly, then heap into a 9-inch baked pie shell.
- Cover with a layer of shredded coconut.
- Top with whipped cream or meringue. Cool thoroughly before cutting.
