Ingredients

  • 4 c. squash
  • 2 medium carrots, grated
  • 1 medium onion, chopped
  • 1 (2 oz.) jar pimentos
  • salt and pepper to taste
  • 1 can cream of chicken soup
  • 1/2 pt. sour cream
  • 1 stick margarine
  • 1 pkg. Pepperidge Farm stuffing (herb seasoned)

Method

  • Cook squash, carrots and onions until tender and water cooks out.
  • Turn off heat and add soup, pimentos and sour cream and mix. Melt margarine and mix with stuffing.
  • Alternate layers of stuffing and squash mixture, starting with stuffing on bottom of casserole.
  • Cook at 350° for 30 minutes.
