Ingredients

  • 4 oz mixed salad greens
  • 4 small peaches, sliced
  • 2 handfuls of blueberries
  • 2 handfuls of walnuts
  • 2 handfuls of fresh mint leaves
  • 1/2 cup cubed smoked cheddar cheese (I have changed it up by using sharp cheddar cheese as well as other cheeses)
  • 2 tsp balsamic vinegar
  • 1 pinch of salt
  • 1 pinch of pepper
  • 2 tbsp extra virgin olive oil

Method

  • Assemble salad ingredients in a bowl.
  • Mix dressing ingredients and drizzle over salad.
  • *To make this vegetarian recipe omnivore, add some prosciutto or Serrano ham.
