Ingredients

  • 3 tablespoons olive oil
  • 1 medium onion, finely diced
  • 1 medium bell pepper, finely diced
  • 1 pound ground beef
  • One 15-ounce can diced fire-roasted tomatoes
  • One 15-ounce can kidney beans, drained and rinsed
  • 1/4 cup tomato paste
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon brown sugar
  • Kosher salt and freshly ground black pepper
  • 4 hamburger buns

Method

  • Heat the olive oil in a large skillet over medium heat.
  • Add the onions and bell peppers and saute until softened, about 10 minutes.
  • Add the beef, breaking it up with a wooden spoon, and cook until browned, 3 to 5 minutes.
  • Add the tomatoes, beans, tomato paste, vinegar, brown sugar, and some salt and pepper, and cook until slightly thickened, 10 to 15 minutes.
  • Serve warm on the hamburger buns.
