Ingredients

  • 1 1/2 c. raw rice
  • 1 1/2 cans whole tomatoes (3 c.)
  • 9 (1/4 inch thick) onion slices
  • 2 cloves garlic, minced fine
  • 6 loin chops (1/2 to 3/4 inch thick)
  • 1 1/2 c. water
  • flour
  • 1 Tbsp. salt
  • 1 tsp. black pepper
  • oil

Method

  • Preheat skillet to 360° with 3 tablespoons oil.
  • Sprinkle pork chops with salt and pepper.
  • Coat both sides with flour and brown. Remove chops and pour off excess fat.
  • Add water; bring to boil and pour liquid into cup and save.
  • Arrange rice evenly in bottom of skillet.
  • Pour evenly 1 1/2 cups or half of tomatoes over the rice.
  • Arrange onion slices over tomatoes.
  • Add chopped garlic. Pour other half of tomatoes over onion slices; add salt and black pepper.
