Ingredients

  • 1 eggplant
  • Italian flavored bread crumbs
  • eggs
  • milk
  • Parmesan cheese
  • Mozzarella cheese
  • oil
  • Hunt's tomato sauce

Method

  • Mix egg and milk.
  • Slice eggplant into 1/2-inch slices. Dip into
  • egg
  • mixture and coat with bread crumbs.
  • Fry in oil until brown
  • on
  • both
  • sides and soft in the middle.
  • Drain on paper towel.
  • Dilute
  • tomato
  • sauce with a little water.
  • Put thin layer
  • in greased casserole dish.
  • Layer sauce, eggplant and Parmesan cheese.
  • Repeat until finished.
  • Top with remaining sauce.
  • Sprinkle
  • with
  • Parmesan
  • and top with Mozzarella cheese. Bake
  • at
  • 350°,
  • uncovered,
  • for
  • 45 minutes or until heated through.
