Ingredients

  • 8 to 10 lb. fully cooked ham
  • 2 c. pineapple juice
  • 2 c. Burgundy wine
  • 1 box dark brown sugar
  • 2 cinnamon sticks
  • 12 whole cloves
  • 1 c. raisins

Method

  • Trim off most of rind from ham.
  • Place ham in Dutch oven.
  • Add 6 cups of water, 1 cup of pineapple juice, 1 cup of Burgundy wine, half the brown sugar and cinnamon sticks.
  • Bring to a boil. Gently simmer for about 20 minutes.
  • Cool.
  • Refrigerate in liquid, covered, overnight, turning once in liquid.
