Ingredients

  • 1 medium onion, chopped
  • 2 clove garlic, chopped
  • 1 packages chorizo sausage
  • 1 can beans, your choice
  • 1 butter
  • 1 eggs
  • 1 salt and pepper
  • 1 shredded cheddar jack cheese
  • 1 tortillas

Method

  • Cook your onion and garlic on med heat in a large skillet until just turning translucent.
  • Remove your chorizo from its casing if needed.
  • Add to the onions and garlic, crumbling it.
  • Use whatever beans you like.
  • I usually use refried pinto beans but you can use refried black or even whole beans if you like.
  • After the chorizo is all crumbled and cooked add your beans.
  • Meanwhile fry your eggs in a bit of butter salting the yolks right before serving.
  • Warm your tortillas and roll up.
  • To serve: place a scoop of the beans and chorizo on your plate top with shredded cheese of your choice and then with a fried egg.
  • Do not forget to salt your yolk and add pepper if you like.
  • Serve with warm rolled tortillas.
