Ingredients
- 4 c. shelled fresh black-eyed peas
- 2 c. water
- 1 medium onion, chopped
- 2 beef flavored bouillon cubes
- 1/2 tsp. red pepper
- 1 bay leaf
- pimiento strips (optional)
Method
- Combine first 6 ingredients in saucepan. Bring to a boil. Cover and reduce heat.
- Simmer 30 minutes or until tender.
- Add water, if necessary. Garnish with pimientos, if desired.
- Yields 8 servings.
