Ingredients

  • 12 oz. can whole kernel corn
  • 15 oz. can black beans, rinsed
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1/2 c. sliced green onion
  • 1 clove garlic, minced
  • 1 tomato, chopped
  • 1 jalapeno pepper, chopped
  • 3/4 c. fat-free Italian dressing
  • 3/4 tsp. Tabasco sauce
  • 1/2 tsp. chili powder
  • 1/2 tsp. cumin
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. fresh cilantro or parsley, chopped

Method

  • In a large bowl, combine corn, beans, onion, pepper, tomato and garlic.
  • In a
  • jar, combine Italian dressing, Tabasco sauce, chili, cumin, vinegar and cilantro. Cover and shake well. Pour over vegetables.
  • Chill at least 6 hours or overnight.
