- 1/2 lb. cooked shrimp
- 1/2 lb. crabmeat
- 1/2 c. cooked rice
- 1/2 c. diced celery
- 1/4 c. pimento-stuffed olives
- 1/4 c. diced green onions
- 1/4 c. mayonnaise
- 1 1/2 tsp. lemon juice
- 1 1/2 tsp. grated orange rind (optional)
- 1 tsp. sugar
- 1/2 c. chopped Mandarin oranges
- 3 ripe avocados, halved
Method
- Mix shrimp and crabmeat with the next 8 ingredients.
- Stir in chopped Mandarin orange sections; chill.
- To serve, fill avocado halves with shrimp and crab mixture.
- Garnish with additional Mandarin orange sections, grapes and melon balls.
- Makes 4 servings.
