Ingredients

  • 1/2 lb. cooked shrimp
  • 1/2 lb. crabmeat
  • 1/2 c. cooked rice
  • 1/2 c. diced celery
  • 1/4 c. pimento-stuffed olives
  • 1/4 c. diced green onions
  • 1/4 c. mayonnaise
  • 1 1/2 tsp. lemon juice
  • 1 1/2 tsp. grated orange rind (optional)
  • 1 tsp. sugar
  • 1/2 c. chopped Mandarin oranges
  • 3 ripe avocados, halved

Method

  • Mix shrimp and crabmeat with the next 8 ingredients.
  • Stir in chopped Mandarin orange sections; chill.
  • To serve, fill avocado halves with shrimp and crab mixture.
  • Garnish with additional Mandarin orange sections, grapes and melon balls.
  • Makes 4 servings.
