Ingredients

  • 1 1/2 lb. steak, trimmed to 1/2 x 2-inch strips
  • 2 cloves garlic, crushed and peeled
  • 1 Tbsp. chopped cilantro
  • 1 Tbsp. crushed red pepper or jalapeno
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • guacamole
  • salsa
  • 1 sliced green pepper
  • 1 diced large tomato
  • 1/4 c. olive or peanut oil
  • juice of 2 limes
  • 12 flour tortillas
  • 2 c. shredded Cheddar cheese
  • 1 sliced onion
  • 1 c. sour cream

Method

  • In medium bowl mix oil, lime juice, cilantro, garlic, red pepper, salt and pepper.
  • Pour marinade over steak.
  • Cover and marinate in refrigerator turning occasionally 1 to 4 days. Barbecue steak on grill brushing with marinade.
  • In skillet, brown green pepper and onion in butter.
