- 2 c. sliced potatoes
- 1 c. sliced carrots
- 1 medium-size onion, sliced
- 2 tsp. salt
- 1 lb. ground beef
- 1 egg
- 1/4 c. bread crumbs
- 1/3 c. milk
- 1/4 tsp. thyme (optional)
- 2 Tbsp. margarine
- 1 can cream of mushroom soup
- 8 oz. sour cream
Method
- Parboil potatoes, carrots, onion and 1 teaspoon salt for 10 minutes.
- Drain and set aside.
- Mix ground beef, egg, bread crumbs, milk, thyme and 1 teaspoon salt.
- Shape into balls.
- Brown meatballs in margarine.
- Remove meatballs from frying pan and pour off all drippings.
- In same frying pan stir soup and sour cream; heat just until hot.
- Layer half of vegetables, meatballs and soup mixture in a baking dish.
- Repeat the layers and bake at 375° for 30 minutes.
