Ingredients

  • 2 c. boned chicken
  • 2 c. cooked rice (1 c. uncooked)
  • 1 can mushroom soup
  • 1 small onion, chopped
  • salt and pepper
  • 1/2 c. chopped celery
  • 1 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1 can sliced chestnuts or mushrooms or both
  • small amount of chicken broth or mushroom liquid

Method

  • Mix well.
  • Sprinkle grated cheese or crumble croutons or potato chips on top.
  • Let set several hours.
  • Bake at 350° for 25 minutes.
  • If casserole is cold allow more time (50 minutes) until hot and bubbly.
