- 2 c. boned chicken
- 2 c. cooked rice (1 c. uncooked)
- 1 can mushroom soup
- 1 small onion, chopped
- salt and pepper
- 1/2 c. chopped celery
- 1 c. mayonnaise
- 1 Tbsp. lemon juice
- 1 can sliced chestnuts or mushrooms or both
- small amount of chicken broth or mushroom liquid
Method
- Mix well.
- Sprinkle grated cheese or crumble croutons or potato chips on top.
- Let set several hours.
- Bake at 350° for 25 minutes.
- If casserole is cold allow more time (50 minutes) until hot and bubbly.
