Ingredients

  • pastry for pie crust
  • 10 oz. cheese (1/2 Swiss, 1/2 Gruyere)
  • 5 Tbsp. flour
  • 2 large onions
  • 4 Tbsp. butter
  • 1 tsp. chopped basil
  • 2 large, firm tomatoes, sliced
  • 2 large eggs
  • 3/4 c. cream

Method

  • Prepare pastry; line a 10-inch pie dish and chill.
  • Grate all the cheese; toss it with the flour.
  • Melt the butter in a large skillet.
  • Slice onions; saute them very gently in butter until they begin to turn golden, about 1/2 hour.
  • Spread about 1/3 of cheese over bottom of pie dish.
  • Spread the onions over it.
  • In butter that is left in pan, heat tomato slices with chopped basil for 1 to 2 minutes.
  • Arrange tomato slices over the onions.
  • Cover with remaining cheese.
  • Beat eggs with cream; pour mixture over the cheese.
  • If you like nutmeg, sprinkle a little on the top. Bake in a preheated 350° oven for about 35 to 40 minutes, or until the top browns nicely.
  • Serve hot in wedges.
  • Serves 6.
