Ingredients
- 1/4 cup bacon drippings or rendered bacon fat
- 1 medium onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 lb. kale, washed, cut into 1/4-inch-wide strips
Method
- Heat bacon fat in large skillet on medium-high heat.
- Add onions and garlic; cook 3 min., stirring frequently.
- Reduce heat to medium.
- Add kale, a handful at a time.
- Cook and stir 5 min.
- or until leaves just begin to wilt.
- (Kale will be just tender.)
