Ingredients
- 1 1/2 lb. mild sausage
- 1 heavy head escarole
- 6 Idaho potatoes
- 1 onion
- oil to fry
- salt to taste
Method
- Wash potatoes, quarter and boil until tender.
- Boil escarole. Cut mild sausage into 1-inch rings.
- Put oil in a nonstick skillet and fry sausage with onion.
- Drain and add escarole.
- Drain and add potatoes.
- Fry on low for about 30 to 40 minutes.
- Delicious 1 pot meal.
- Easy to serve.
