Ingredients

  • 1/2 cups Melted Butter
  • 1 carton Eggs, One Dozen
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pepper
  • 5 drops Tabasco Sauce
  • 1/2 cups Sifted Flour
  • 1 teaspoon Baking Powder
  • 2 cups Ground Sausage (I Use Jimmy Dean's Spicy Sausage!)
  • 1 pound Shredded Monterey Jack Cheese
  • 1 pint Small Curd Cottage Cheese

Method

  • Melt butter and put 1/2 in a 9x13" pan.
  • In a large bowl beat eggs; salt and pepper eggs to taste, add Tabasco sauce.
  • Add flour, baking powder, sausage, cheese, cottage cheese and remaining melted butter to eggs.
  • Poor egg mixture to 9x13" pan. Bake at 400 degrees for 20 minutes. Reduce heat to 350 degrees for 30 minutes or until puffed light golden brown (or until knife comes out clean when tested).
  • This can be made the night before and stored in the refrigerator until ready to bake.
