Ingredients

  • 1 lg. sausage
  • 1 lg. onion, minced
  • 2 Large eggs, lightly beaten
  • 1 1/2 c. Martha White buttermilk self-rising cornmeal mix
  • 1 can cream-style corn
  • 3/4 c. lowfat milk
  • 1/2 c. vegetable oil
  • 2 c. (8 ounce.) grated sharp Cheddar cheese

Method

  • Preheat oven to 425 degrees.
  • Grease a 10 1/2 inch skillet or possibly 2 qt baking dish; set aside.
  • Brown sausage and onion in medium skillet; drain well.
  • Combine Large eggs, cornmeal, lowfat milk and oil.
  • Pour half of cornmeal mix into prepared skillet; sprinkle with sausage mix and cheese.
  • Pour remaining batter over top.
  • Bake 30-40 min.
  • Let cold 10 min.
  • 6-8 servings.
