Ingredients

  • 1 lb. sauerkraut (canned or bulk)
  • 1 large onion, finely chopped
  • 2 Tbsp. margarine
  • 1 tart apple, finely chopped
  • 1/4 c. brown sugar
  • 1 or 2 c. cubed ham or frankfurters
  • 6 or 8 small potatoes, parboiled

Method

  • Drain sauerkraut and press out all liquid.
  • Saute onion in margarine until transparent.
  • Add sauerkraut and rest of ingredients to onion.
  • Simmer on low heat at least 30 minutes. Serve immediately or transfer to casserole and refrigerate.
  • When ready to serve, heat at 300° for 20 to 30 minutes or in microwave 6 to 7 minutes.
