Ingredients
- 3 cloves garlic, chopped
- 1 large onion, sliced
- 3 slender Italian or Chinese eggplant, sliced and quartered
- 1 can Italian tomatoes
- 1 to 2 Tbsp. olive oil
- salt to taste
- 1/2 to 1 tsp. red pepper flakes (fresh or dried)
- basil to taste
- 1/2 c. Ricotta cheese
Method
- Brown lightly, garlic, onion and eggplant.
- Add Italian tomatoes, cut fine.
- Cook for 10 minutes.
- Cover and cook for 20 minutes.
