Ingredients
- 8 mushrooms
- 1/2 c. clear chicken broth
- 2 c. skim milk
- 1/4 c. flour
- 1/2 tsp. salt
- dash of pepper
- 1 Tbsp. pimento, chopped
- 2 c. cooked chicken, diced
- 4 slices toast
Method
- Cook fresh mushrooms in broth.
- Drain and measure broth.
- Add water to make 1/2 cup.
- Heat 1 1/2 cups skim milk and 1/2 cup broth in the top of a double boiler.
- Blend flour and the remaining 1/2 cup skim milk until no lumps remain.
- Add to heated milk and broth, stirring constantly until thickened.
- Add chicken, mushrooms, pimento and seasoning.
- Reheat.
- Serve on toast.
- Yield:
- 4 servings.
- Carbohydrate 22 g, protein 28 g, fat 10 g, calories 290. One serving = 3 meat low-fat exchange, 1 bread starch exchange, 1 vegetable exchange.
