Ingredients

  • 8 mushrooms
  • 1/2 c. clear chicken broth
  • 2 c. skim milk
  • 1/4 c. flour
  • 1/2 tsp. salt
  • dash of pepper
  • 1 Tbsp. pimento, chopped
  • 2 c. cooked chicken, diced
  • 4 slices toast

Method

  • Cook fresh mushrooms in broth.
  • Drain and measure broth.
  • Add water to make 1/2 cup.
  • Heat 1 1/2 cups skim milk and 1/2 cup broth in the top of a double boiler.
  • Blend flour and the remaining 1/2 cup skim milk until no lumps remain.
  • Add to heated milk and broth, stirring constantly until thickened.
  • Add chicken, mushrooms, pimento and seasoning.
  • Reheat.
  • Serve on toast.
  • Yield:
  • 4 servings.
  • Carbohydrate 22 g, protein 28 g, fat 10 g, calories 290. One serving = 3 meat low-fat exchange, 1 bread starch exchange, 1 vegetable exchange.
