Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped fresh or frozen onion
  • 2 garlic cloves, minced (or 1/2 teaspoon garlic powder)
  • 2 (15 ounce) cans black beans, drained and rinsed
  • 1 (14.5 ounce) can stewed tomatoes, undrained and chopped
  • 1 (10.5 ounce) can chicken broth
  • 1/2 cup picante sauce
  • 1/4 cup water
  • 1 teaspoon ground cumin
  • 2 tablespoon lime juice
  • chopped fresh cilantro (optional)

Method

  • Heat oil in a large saucepan over medium heat until hot.
  • Add onion and garlic; saut 5 minutes or until tender.
  • Stir in beans and next 5 ingredients.
  • Bring to a boil; reduce heat and simmer uncovered for 15 minutes.
  • Remove from heat and stir in lime juice. Ladle into bowls and garnish with cilantro, if desired.
  • Makes six one-cup servings.
