Ingredients

  • 2 lb. ground chuck or round
  • 1 c. onions, chopped
  • 1 (15 oz.) can black beans
  • 1 (15 oz.) can pinto beans
  • 1 (15 oz.) can kidney beans
  • 2 (11 oz.) cans white shoe peg corn
  • 2 (10 oz.) cans Rotel with green chile peppers
  • 1 qt. canned tomatoes (2 cans diced tomatoes)
  • 1 pkg. ranch dressing mix
  • 2 pkg. French's taco season mix
  • 4 c. water
  • sour cream
  • shredded cheese
  • Frito corn chips

Method

  • Brown beef and onion, drain. Add: ranch dressing, taco mix, and water. Mix and let sit. In large pot mix beans, tomatoes, and corn. Add meat mixture. Heat and simmer for 2 hours. This recipe is better if cooked on top of stove instead of crock pot. To serve, place 2 tablespoons of sour cream in each bowl. Fill with soup and top with shredded cheese and corn chips.
