Ingredients
- 3 1/2 to 4 lb. chicken
- 2 tsp. salt
- 1 1/2 c. flour
- 3 tsp. baking powder
- 3/4 c. milk
- 1/2 tsp. salt
- 1 tsp. minced parsley (optional)
Method
- Clean chicken; rub skin with baking soda and wash off carefully.
- Cut up chicken; peel off excess fat.
- Fit chicken pieces completely in cooking kettle.
- Add salt; cook 1 1/2 to 2 hours or until tender.
- Sift flour, baking powder and salt.
- Add milk and stir until mixture is dampened.
- Add parsley; stir until distributed evenly.
- Add to chicken.
- Cook until done.
- Remove chicken to platter and dumplings to gravy bowl.
- Makes 5 to 6 servings.
