Ingredients

  • 3 1/2 to 4 lb. chicken
  • 2 tsp. salt
  • 1 1/2 c. flour
  • 3 tsp. baking powder
  • 3/4 c. milk
  • 1/2 tsp. salt
  • 1 tsp. minced parsley (optional)

Method

  • Clean chicken; rub skin with baking soda and wash off carefully.
  • Cut up chicken; peel off excess fat.
  • Fit chicken pieces completely in cooking kettle.
  • Add salt; cook 1 1/2 to 2 hours or until tender.
  • Sift flour, baking powder and salt.
  • Add milk and stir until mixture is dampened.
  • Add parsley; stir until distributed evenly.
  • Add to chicken.
  • Cook until done.
  • Remove chicken to platter and dumplings to gravy bowl.
  • Makes 5 to 6 servings.
