Ingredients

  • 1 lb. lean ground beef or turkey
  • 1 c. chopped onions
  • 2 cloves garlic, minced
  • 3 1/2 c. (28 oz. can) crushed tomatoes in puree
  • 1 tsp. dried oregano, crushed
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 c. thinly sliced zucchini
  • 4 oz. (1 1/2 c.) dry wide noodles, cooked and drained
  • 1 c. shredded Cheddar cheese

Method

  • Preheat oven to 350°.
  • In large skillet, brown beef with onion and garlic.
  • Drain well.
  • Mix in tomatoes, oregano, salt and pepper.
  • Simmer 10 minutes, stirring occasionally.
  • Mix in zucchini; cook for additional 10 minutes.
  • Blend in noodles.
