Ingredients

  • 1 (16 oz.) can salmon
  • 2/3 c. undiluted evaporated milk
  • 2 c. soft bread crumbs
  • 1 egg, slightly beaten
  • 1/2 tsp. salt
  • 1/4 tsp. poultry seasoning
  • 1/3 c. celery, finely chopped
  • 1/4 c. green pepper, finely chopped
  • 1 Tbsp. lemon juice
  • 1 Tbsp. dried minced onion
  • 1/8 oz. pkg. Hollandaise sauce mix

Method

  • Put salmon with liquid into a bowl.
  • Remove bones and flake salmon.
  • Combine milk and bread crumbs.
  • Add to salmon and mix gently with fork.
  • Add egg, salt, poultry seasoning, celery, green pepper, lemon juice and onion.
  • Mix.
  • Turn mixture into well-greased 1-quart ring mold.
  • Bake at 375° for 30 minutes or until firm.
