Ingredients
- 4 oz. (1 c. dry) macaroni or twisty noodles or shells
- 1 (6 oz.) jar marinated artichoke hearts
- 1/4 lb. mushrooms, quartered
- 1 c. cherry tomatoes, halved
- 1 c. medium pitted ripe olives
- 1 Tbsp. parsley, chopped
- 1/2 tsp. dry basil
- salt and pepper to taste
Method
- Cook pasta according to package directions.
- Drain and rinse with cold water (drain again).
- In a large bowl, add pasta, artichokes and marinade, mushrooms, tomatoes, olives, parsley, and basil.
- Toss gently.
- Cover and refrigerate at least 2 hours. Before serving, season to taste with salt and pepper.
- Serves 6.
