Ingredients

  • 4 oz. (1 c. dry) macaroni or twisty noodles or shells
  • 1 (6 oz.) jar marinated artichoke hearts
  • 1/4 lb. mushrooms, quartered
  • 1 c. cherry tomatoes, halved
  • 1 c. medium pitted ripe olives
  • 1 Tbsp. parsley, chopped
  • 1/2 tsp. dry basil
  • salt and pepper to taste

Method

  • Cook pasta according to package directions.
  • Drain and rinse with cold water (drain again).
  • In a large bowl, add pasta, artichokes and marinade, mushrooms, tomatoes, olives, parsley, and basil.
  • Toss gently.
  • Cover and refrigerate at least 2 hours. Before serving, season to taste with salt and pepper.
  • Serves 6.
