Ingredients
- 4 boned chicken breasts
- 3/4 c. seasoned bread crumbs
- 1/2 c. butter
- 1/2 c. dark rum
- salt
Method
- Marinate chicken in rum about 2 hours; coat with crumbs and brown in butter over medium heat.
- Put 1 teaspoon of oil in pan before butter to prevent burning.
- Place in a shallow baking dish and salt lightly.
- Pour rum marinade into butter drippings. Swish together and pour over chicken.
- Bake at 325° for 40 to 45 minutes.
