Ingredients

  • 22 very small red potatoes
  • 1/2 cup cottage/goat cheese (4oz.)
  • 1 tbsp. fresh lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. ground pepper
  • 1 L egg white
  • 1 1/2 snipped chives

Method

  • 1.Preheat oven to 425 degrees. Roast potatoes until tender. Turn two or three times. 20-30 minutes. Let cool. 2. Halve 18 potatoes. Cut a sliver off the bottom and make them into little bowl shapes. Pell remaining potatoes; add potatoe "flesh." Mash, mix in cheese, lemon juice, salt, pepper, egg white and chives. 3. Spoon the filling into potatoe shells. Bake until golden. About 15 minutes. Garnish with remaining chives.
