Ingredients

  • 1/2 cup salad dressing, creamy ranch reduced fat light ranch dressing
  • 1/2 cup cheddar cheese, reduced-fat shredded
  • 1/4 cup bacon bits
  • 2 pound red skinned potatoes small, and quartered
  • 1 tablespoon parsley leaves FRESH, chopped

Method

  • Pre-heat oven to 350F (180C).
  • Mix dressing, cheese and bacon bits in large bowl.
  • Add potatoes, toss lightly.
  • Spoon into lightly greased 9x13 baking dish; cover with foil.
  • Bake 40 minutes.
  • Remove foil; bake additional 15 minutes or until potatoes are tender.
  • Sprinkle with parsley.
