Ingredients
- 1/2 cup salad dressing, creamy ranch reduced fat light ranch dressing
- 1/2 cup cheddar cheese, reduced-fat shredded
- 1/4 cup bacon bits
- 2 pound red skinned potatoes small, and quartered
- 1 tablespoon parsley leaves FRESH, chopped
Method
- Pre-heat oven to 350F (180C).
- Mix dressing, cheese and bacon bits in large bowl.
- Add potatoes, toss lightly.
- Spoon into lightly greased 9x13 baking dish; cover with foil.
- Bake 40 minutes.
- Remove foil; bake additional 15 minutes or until potatoes are tender.
- Sprinkle with parsley.
