Ingredients

  • 5 lb. pork roast
  • juice of 1/2 lemon
  • 1 Tbsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. sage
  • 1/4 tsp. mace
  • 1 tsp. thyme
  • 1 bay leaf
  • 8 parsley sprigs
  • 3 celery stalks with leaves
  • 1 garlic clove
  • 1 onion
  • 1 can beef consomme

Method

  • Have meat at room temperature.
  • Rub meat all over with lemon juice and then salt.
  • Combine spices and rub well into meat. Place bay leaf, parsley, celery, onion and garlic and consomme around meat.
  • Cover.
  • Roast at 350°.
  • Baste every 30 minutes. Roast approximately 35 minutes per pound until meat is tender and brown.
