Ingredients
- 5 lb. pork roast
- juice of 1/2 lemon
- 1 Tbsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. sage
- 1/4 tsp. mace
- 1 tsp. thyme
- 1 bay leaf
- 8 parsley sprigs
- 3 celery stalks with leaves
- 1 garlic clove
- 1 onion
- 1 can beef consomme
Method
- Have meat at room temperature.
- Rub meat all over with lemon juice and then salt.
- Combine spices and rub well into meat. Place bay leaf, parsley, celery, onion and garlic and consomme around meat.
- Cover.
- Roast at 350°.
- Baste every 30 minutes. Roast approximately 35 minutes per pound until meat is tender and brown.
