Ingredients

  • 2 (10 oz.) lobsters, thawed
  • 2 large red potatoes
  • 1 large green pepper
  • 1 medium onion
  • 2 cloves garlic
  • 1 bottle squeeze Parkay
  • 2 c. cooked rice
  • salt, red pepper and garlic powder

Method

  • In deep baking dish, cut potatoes.
  • Slice onion in rings and pepper into strips.
  • Chop garlic.
  • Season to your taste.
  • Season lobster in shell.
  • Place lobsters over vegetable mixture in pan. Squeeze Parkay over lobsters and vegetables.
  • Every 10 minutes squeeze Parkay over lobsters.
  • Cook at 350° for 1 1/2 hours, basting often.
  • Serve garlic sauce, potatoes and onion over hot rice with lobster.
