Ingredients
- 2 (10 oz.) lobsters, thawed
- 2 large red potatoes
- 1 large green pepper
- 1 medium onion
- 2 cloves garlic
- 1 bottle squeeze Parkay
- 2 c. cooked rice
- salt, red pepper and garlic powder
Method
- In deep baking dish, cut potatoes.
- Slice onion in rings and pepper into strips.
- Chop garlic.
- Season to your taste.
- Season lobster in shell.
- Place lobsters over vegetable mixture in pan. Squeeze Parkay over lobsters and vegetables.
- Every 10 minutes squeeze Parkay over lobsters.
- Cook at 350° for 1 1/2 hours, basting often.
- Serve garlic sauce, potatoes and onion over hot rice with lobster.
