Ingredients

  • 2 med apples, sliced
  • 1 T butter
  • 1/2 cup plus 2 T sugar, divided
  • 2 t ground cinnamon
  • 1/4 cup cake flour
  • 3 t baking powder
  • 1/3 t salt
  • 1 cup ricotta cheese
  • 1 cup 2% milk
  • 3 eggs, separated yolks/whites
  • 1 t grated lemon peel
  • 1 t lemon juice
  • Maple syrup

Method

  • In a large saucepan, cook apples in the butter over med. heat for 6-8 min or until tender. Sprinkle with 1/2 cup sugar and cinnamon, set aside.
  • In a large bowl, combine flour, baking powder, and salt.
  • In another bowl, combine cheese, milk, egg yolks, lemon peel, juice, and remaining sugar. Stir into remaining dry ingredients just until combined.
  • In a small bowl, beat egg whites till stiff peaks form. Fold into batter.
  • Pour batter by 1/4 cupfuls onto a hot greased griddle. Turn when bubbles form. Cook till the second side is golden brown. Serve with apples and syrup.
